Yummy Wednesday - Ghirardelli Brownies

Do you have the ongoing conversation in your house about what kind of brownie is better - fudgy or cakey?  We do - all the time.  And this brownie, it has both!  It pleases both sides and is DELICIOUS!  I made this a couple of weeks ago because one of my confirmation kids had a birthday, and I happened to have all the ingredients in my kitchen...  So wa-la!  Our new favorite.  We can't get enough.

If you enjoy these half as much as we do...  Well.  Life is good.

Ghirardelli Brownies

You will need:
2 large eggs
3/4 cup sugar
1 teaspoon pure vanilla extract
1/2 cup unsalted butter, melted
3/4 cup Ghirardelli Sweet Ground Chocolate & Cocoa (Dutch processed cocoa)
2/3 cup all-purpose flour, unsifted
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup walnuts, chopped (optional)
1 cup bittersweet or semi-sweet chocolate chips (optional - but takes them to the next level!)

Preparation:
Preheat oven to 350 degrees F.
Using a wooden spoon whisk together eggs, sugar, butter and vanilla.
In another bowl, combine flour, cocoa, baking powder and salt.
Stir flour mixture into egg mixture.Stir until thick and glossy.
Add nuts and chocolate chips. Combine well.
Spread into a greased 8- or 9-inch square pan.  Bake for 20-30 minutes.
Cut into squares.

Makes 16-20 brownies.  (Or nine HUGE brownies!)

Note:
For extra chewy brownies, use 8 inch pan and less baking time.
For cake like brownies, use 9 inch pan and longer baking time.

Today I am thankful for:

1.  My comfy bed.
2.  My silly dog.
3.  A warm shower.
4.  All the spiritual mentors we have in books.
5.  A productive meeting.
6.  Black bean and chicken enchiladas.
7.  A good month in finances!
8.  Hugs from the hubby.
9.  Venting frustrations.
10.  Eating healthy.
