Yummy Wednesday - Strawberry Rhubarb Crisp

Since I posted that I made this on Sunday, I have had no less than five people ask for the recipe! Ha ha ha. So... I had another recipe to post today, but here it is: one of my very favoritist desserts from my childhood and growing up! I hereby give to you,
Mom's Strawberry Rhubarb Crisp

For the "crisp":
1 cup flour
3/4 cup old fashioned oatmeal (not instant)
1 cup brown sugar
1/2 cup butter
1 tsp cinnamon

For the fruit filling:
4 cups fruit, sliced - I used 2 cups strawberries and 2 cups rhubarb. You can also make this same recipe with 4 cups peaches, or 4 cups apples.
1 cup sugar
1 cup water
2 tbsp cornstarch
1 tsp vanilla

To make the crisp:
Mix flour, oatmeal, brown sugar, butter, and cinnamon very well. Press 1/2 the mixture into the bottom of a 9 inch pan. Save the other half for topping.

To make the filling:
Place the 4 cups of fruit on top of the first layer of crisp.
Place sugar, water, cornstarch and vanilla in a small pot. Cook over medium heat until the mixture is thick and clear, stirring constantly. (It will begin to boil - keep stirring!)
Pour the thick, clear syrup over the fruit.

Top with the remainder of the crisp mixture.
Bake at 350 degrees for 1 hour. (You may want to place a pan underneath - the juices may bubble out a little bit.)

Serve warm with soft vanilla ice cream.... Yum... Enjoy!

7. Leading the Bible study with a whole other group of ladies - so fun!
8. Taking a walk with the hubby and dog when I got home.
9. Vosges chocolate.
10. Time to relax before bed.
